
Warm Chicken Salad
4 Grilled Chicken Breasts, sliced into strips
½ Red Onion, julienned
1 Red Pepper, julienned
6 New potatoes, sliced and steamed
½ lb. Snow Peas
1 Bunch Parsley, chopped
2 Lemons, juiced
¼ Cup Olive oil
2 T Garlic, chopped
2 T Sugar
2 T Whole grain mustard
¼ Cup Rice wine vinegar
Salt and Pepper to taste
1. In a large sauté pan, whisk together the juice of the lemons, olive oil, garlic, sugar, mustard, and vinegar until well incorporated. 2. Add the onions, peppers, potatoes and snow peas.
3. Toss in the chicken and parsley. Warm the mixture for about 5 minutes.
4. Season with Salt and Pepper. Can be served warm or cold.
