Shrimp Scampi

Serves 4

Ingredients:

  • ¼ lb. Butter
  • 2 tbsp. Olive oil
  • ½ cup Shallot, minced
  • 2 tbsp. Garlic, chopped
  • 1 lb. Raw shrimp, peeled/de-veined/butterflied
  • 2 tbsp. Old Bay
  • 1 cup White wine
  • 1 Lemon, zested and juiced
  • 1 cup Roasted red pepper, sliced
  • ½ cup Roasted tomatoes, rough chopped
  • Salt and Pepper, to taste
  • 1 cup Flat-leaf parsley, chopped
  • 1 lb Fettuccini, cooked al dente

1.  In a large sauté pan, melt butter and oil.

2.  Sauté shallot and garlic until translucent.

3.  Add shrimp and Old Bay and cook until shrimp are pink.

4.  Deglaze pan with white wine and lemon juice and add zest of the lemon.

5.  Add tomatoes and peppers and bring to a simmer.

6.  Season with salt and pepper to taste.

7.  Add cooked fettuccini and parsley.

8.  Cook for 1-2 minutes and serve hot.
