  • 1 9-inch Pie Shell - prebaked for 9 min.
  • ½ medium Red Onion - chopped
  • 4 large Tomatoes - halved, seeded, juiced and chopped
  • ¼ cup Basil - sliced
  • 2 cups Cheese - grated (can be single cheese variety, or mixed variety)
  • ¾ cup Mayonnaise
  • 1 teaspoon Hot Sauce
  • Salt & Pepper to taste


1.  Preheat oven to 350 degrees.

2.  Squeeze as much moisture as you can from chopped  tomatoes.

3.  Sprinkle the bottom of the prebaked pie shell with the onions.  Next spread the chopped tomatoes and basil in the shell.

4.  In a medium bowl mix together the mayonnaise, cheese, hot sauce, and salt & pepper.

5.  Spread mixture over tomatoes and bake until browned and bubbly, about 30 to 40 minutes.
