Cold Cucumber Soup
6 cucumbers, seeded, peeled and chopped
2 cloves garlic, minced
1 cup breadcrumbs
2 cup sour cream
½ cup minced red onion
3 cup water
¼ cup olive oil
1/8 cup lemon juice
Sun-Dried Tomato Vinaigrette
3 cup salad oil
1 cup olive oil
½ cup lemon juice
2 tsp salt
1 tsp pepper
4 cloves garlic, minced
1 cup fresh spinach
1 cup roasted red bell pepper
½ cup rehydrated sun-dried tomatoes
½ cup shredded parmesan cheese
