- 1 cup dried Cranberries
- 1/2 cup fresh Orange juice
- 1/2 cup Cucumber, peeled, seeded, and diced
- 1/2 cup Red onion, diced
- 1/4 cup fresh Cilantro, chopped
- 1 Garlic clove, minced
- 1 Jalapeno pepper, seeded and diced
- 1/4 cup fresh Lime juice
- 1/2 tsp. ground Cumin
- 1/2 tsp Salt
1. Soak Cranberries in Orange juice in a bowl for 30 minutes.
2. Stir in Cucumber and remaining ingredients. Cover and chill.
