Yuca w/ Tomatillo Sauce

1. Rinse and peel yuca. Cut lengthwise, remove core & slice.
2. Place in a large sauce pan, cover with water. Bring to a boil. Reduce heat, simmer 20-30 minutes or until tender. Remove from water when done
3. Salt and pepper to taste. Keep warm.
4. Meanwhile, in a food processor or blender combine remaining ingredients and process until smooth.
5. Serve sauce over Yuca.
